
Set cooked ounces from the role meat plays in the meal. A plated centerpiece generally needs more than a mixed dish with grains, vegetables, or several sides. Plan leftovers explicitly instead of hiding them in an oversized per-person number.
Name the meat's role
Use one of four roles: centerpiece, component, filling, or batch base. The same household can reasonably choose different cooked ounces for steak night, tacos, pasta sauce, and soup.
Count people and portions separately
Children, adults, athletes, and seconds do not map perfectly to headcount. Estimate likely portions, then add a separate contingency only when the meal cannot tolerate running short.
Let sides do real work
Several substantial sides can reduce the needed meat portion; a sparse plate cannot. Write the menu beside the quantity so future you knows why the assumption was chosen.
Plan leftovers by destination
State the next meal: lunches, sandwiches, fried rice, soup, or freezer packs. If no one wants that follow-up meal, do not call accidental excess a useful leftover.
Round at the last step
Keep intermediate math visible, then round raw pounds to available package sizes. Record the extra ounces created by rounding and assign them to the leftover plan.

Worked example
Separate dinner from tomorrow's lunches
Four diners receive 6 cooked oz each = 24 oz. Two planned lunches receive 5 oz each = 10 oz. Total cooked target = 34 oz, or 2.125 lb.
At 70% combined cooked yield, raw need = 2.125 ÷ 0.70 ≈ 3.04 lb. Buy the nearest practical package at or above that amount and assign any rounding difference before cooking.
